THIC® (formerly known as This Isn’t Chocolate) is a delicious alternative chocolate made from upcycled ingredients like brewer’s spent grain (barley from beer production) and cacao shells. No palm oil, no additives, and no labs – just a damn tasty product made by chefs doing their thing.  

A chocolate-like product that you can melt, bake, or temper – exactly like you’re used to.

our process

more aprons, less lab coats

As appealing and delicious as ai-powered, 3D-printed chocolate sounds, we’ve decided to take a route that better resembles cooking and traditional chocolate-making. 

Our chefs mimic chocolate processes to transform brewer’s spent grain into a THIC Powder, ready to be put into a chocolate production line. Refining and conching helps produce that chocolate-y mass that speeds through a tempering and moulding line, making it ready for most [non-explicit] chocolate dreams.

Take it from our longstanding collaboration with 7-Eleven Denmark. We are supplying THIC chips that get baked into all of 7-Eleven’s cookies – that’s for all 180 stores nationwide! A 1:1 replacement to satisfy the chocolate cravings of the Danish market.

bakery

We supply bakeries of varying sizes throughout Europe with THIC chips, chunks and blocks. Generally used in well known baked applications like pain au chocolats, cookies, & brownies, we’ve also seen partners make cakes, mousses, and fillings – all while following their normal recipes and baking times. 

 

 

culinary

We cut our teeth in restaurants, and its important to us that we stay close to the hospitality scene. Here, we’ve seen chefs take our THIC chips and blocks to make ice creams, sauces and ganaches for a plethora of creative desserts.
